High Protein Egg Salad

Ingredients:

  • 2 hard boiled eggs, chopped

  • ½ cup cottage cheese

  • 2 tbsp red onion, finely diced

  • 2 tbsp green onion, sliced

  • ¼ avocado, mashed

  • salt & pepper, to taste

    Directions:

  • In a bowl, mash the avocado slightly

  • Add chopped eggs, cottage cheese, red onion, and green onion

  • Mix until well combined

  • Season with salt & pepper to taste

*Serving Suggestions:

  • serve with rice cakes, toast, or in a wrap depending on your preference.
