High Protein Egg Salad

Ingredients:
2 hard boiled eggs, chopped
½ cup cottage cheese
2 tbsp red onion, finely diced
2 tbsp green onion, sliced
¼ avocado, mashed
salt & pepper, to taste
Directions:
In a bowl, mash the avocado slightly
Add chopped eggs, cottage cheese, red onion, and green onion
Mix until well combined
Season with salt & pepper to taste

serve with rice cakes, toast, or in a wrap depending on your preference.
