Italian Sausage Penne Skillet

Ingredients:
2 hot Italian sausages
~50g dry penne pasta
3 bell peppers, sliced
1/2-1 red onion, sliced
3-4 cloves garlic, minced
2 roma tomatoes, diced
2 tbsp tomato paste
½ cup chicken or vegetable broth
½ tsp crushed chilli flakes
1 tsp Italian seasoning
1 tsp fennel seeds
salt & pepper, to taste
Directions:
Cook the paste until al dente, then drain and set aside.
Brown the sausage in a skillet with a bit of oil (and optional water), then remove and slice.
Saute the aromatics (onions, spices, garlic, tomato) in the same skillet. Add bell pepper, tomato paste and broth; cook until veggies are tender.
Add sliced sausage back to the skillet and simmer until fully cooked and the sauce thickens.
Toss in the pasta, stir to coat.
