Italian Sausage Penne Skillet

Ingredients:

  • 2 hot Italian sausages

  • ~50g dry penne pasta

  • 3 bell peppers, sliced

  • 1/2-1 red onion, sliced

  • 3-4 cloves garlic, minced

  • 2 roma tomatoes, diced

  • 2 tbsp tomato paste

  • ½ cup chicken or vegetable broth

  • ½ tsp crushed chilli flakes

  • 1 tsp Italian seasoning

  • 1 tsp fennel seeds

  • salt & pepper, to taste

Directions:

  • Cook the paste until al dente, then drain and set aside.

  • Brown the sausage in a skillet with a bit of oil (and optional water), then remove and slice.

  • Saute the aromatics (onions, spices, garlic, tomato) in the same skillet. Add bell pepper, tomato paste and broth; cook until veggies are tender.

  • Add sliced sausage back to the skillet and simmer until fully cooked and the sauce thickens.

  • Toss in the pasta, stir to coat.
