Ingredients:
½ box of spaghetti noodles (approx. 210g of pasta)
¼ cup light peanut butter
1 tbsp chili oil
1 tsp seasame oil
1 tsp vinegar
3 tbsp soya sauce
1 tbsp honey
2 cloves of garlic (minced)
1 tsp minced ginger
2 med chicken breast
1 bunch broccolini
Green onions
Garlic powder
Onion power
Directions:
Preheat oven to 400 degrees.
Season chicken breasts with 1 tbsp of soya sauce, garlic powder and onion powder. Bake for 20 minutes, flipping halfway through.
Cook noodles according to package. Set aside.
While pasta cooks: In a medium bowl, add all ingredients for sauce: ¼ cup peanut butter, 2tbsp soy sauce, 1tbsp chili oil, 1tsp seasame oil, 1 tsp vinegar, 1 tbsp honey, 2 cloves of garlic (minced), 1tsp minced ginger.
Steam broccolini for approx. 6 minutes until tender crisp.
While the pot from the noodles is still warm, add sauce ingredients from medium bowl and mix with a whisk. The heat will help the honey and peanut butter to mix more easily. Once sauce is mixed, add noodles back to pot, toss to combine.
Divide chicken, noodles and broccolini evenly amongst plates. Top noodles with green onion and chili flakes as desired.
