Cottage Cheese Pizza Crust

Servings: 1 pizza crust

Ingredients:

  • 1 cup all purpose flour

  • 1 cup cottage cheese

  • 1 ½ tsp baking powder

  • ¼ tsp salt

Directions:

  • Preheat oven to 400°F degrees.

  • Blend cottage cheese in a blender until smooth

  • Mix flour, baking powder and salt. Once mixed, add flour. The dough will be sticky, best to use hands to mix.

  • On a piece of parchment paper add flour (to prevent sticking). Place dough onto parchment paper, rollout with a rolling pin, adding flour to coat as needed to prevent sticking. You want to have the dough fairy thin (should be rolled out to somewhere between 10-12 inches in diameter).

  • Place both the parchment paper with the dough on top onto a pizza pan. Bake for 6 minutes.

  • Once time is done, remove the piece of parchment paper and return to pizza pan. Add your favourite sauce, toppings and cheese, return to oven for 10-12 minutes until the crust is golden brown and your cheese is bubbly.

  • Let cool slightly before cutting into pieces and enjoy.
