Smoked Salmon Sushi Bowl

Ingredients:
Smoked Salmon (Dom Reserve, found at Costco)
1 cup cooked basmati rice
1 tsp seasame oil
1 tbsp soy sauce
½ of a large cucumber
Roasted seaweed snack (Kirkland brand, Costco) – ½ of a package
1 cup frozen shelled edamame beans
½ an avocado
1.5tbsp miracle whip
1 tbsp Sriracha hot sauce
Directions:
Allow time for salmon to thaw (approx. 1 hour or place in fridge the night prior). Once thawed and ready to use, slice into small pieces.
To your one cup of cooked rice, add sesame oil and soy sauce
Cut cucumbers as desired, whether cubed or in small sticks. Cut seaweed snack into strips or bite-sized pieces.
Place edamame beans in a microwave safe dish with 2 tbsp of water, heat in microwave for 3 minutes. Strain.
Make the spicy mayo. Mix the miracle whip with Sriracha.
Assemble bowls. Place ½ of the rice in each bowl, place one serving of sliced salmon into each bowl, divide edamame beans, cucumber, seaweed snack, avocado evenly between bowls. Top with spicy mayo sauce.
